Our Classic Italian Lasagna would often take the place of a Sunday roast in our household. In the region where we’re from the pasta will be made fresh (either normal yellow fresh pasta or in Bologna they make their pasta green using spinach) – although you can also use pre-cooked pasta sheets from your local supermarket.

For us, making a Lasagna was a ritual…our nonna would prepare the ragu and pasta on the Saturday and we remember going to bed as kids with the smells of the ragu simmering right through the house. Then on the Sunday morning us kids would help her layer it up. Yes it takes a little time to make with fresh pasta – but hey, so does a Sunday roast!

To buy:

Basic Pasta Dough OR 1 store bought packet of pre-cooked lasagne sheets

50g smoked pancetta, roughly chopped

1 red onion, peeled and finely chopped

1 carrot, peeled and finely chopped

1 stick of celery, finely chopped

500g good-quality beef mince

1⁄2 a wine glass of red wine

1 x 400g tin good-quality chopped tomatoes

200ml organic beef stock

1 dried bay leaf

1 x quantity ofwhite sauce

Store-cupboard essentials:

1 clove of garlic, peeled and crushed

fine salt and freshly ground black pepper

2 tablespoons tomato purée

a splash of milk, if needed

75g freshly grated Parmesan cheese, plus extra to serve

METHOD

MAKEyour white sauce

MAKEyourbasic egg pasta doughand roll it into long pasta sheets and then and cut it into strips to fit a 30cm x 20cm lasagne dish. You can also usestore bought packet of pre-cooked lasagne sheets

HEAT a large pan over a medium heat. When hot, lower the heat and fry the pancetta for 2 to 3 minutes, until it starts to crisp up.

STIRin the onion, carrot and celery and leave to sweat with the lid on for 10 minutes, until soft and translucent. Add the garlic to the pan and stir for 1 minute.

ADDthe beef to the pan, stirring occasionally until browned all over. Pour in the wine and keep stirring for 2 minutes. The aim is to burn off the alcohol, leaving just a hint of the lovely wine flavour.

STIRin the tomato purée and chopped tomatoes and then add the beef brothandthe bay leaf and stir together. Leave the ragù to simmer with the lid on for 15 minutes. Remove the lid and continue to simmer for a further 15 minutes. Season with salt and pepper (keep in mind that the Parmesan used in the lasagne is quite salty).

PREHEATthe oven to 180 ̊C/350 ̊F/gas 4.

BRINGa large pan of salted water to the boil and blanch the pasta sheets for about 2-3 mins, until al dente. Lay them on a clean tea towel to absorb most of the water. Reheat the white sauce, loosening the sauce with a little milk, if needed.

ASSEMBLEthe lasagne by starting tocover the bottom of a 30cm x 20cm ovenproof dish with a thin layer of white sauce. This will stop the pasta sticking to the base and burning. Follow this with a layer of pasta. Slightly overlap the strips so that there are no gaps, but don’t let the pasta curl up the sides of the dish; cut the pieces to fit. Top with a layer of white sauce and then a layer of ragù and a sprinkle of parmesan. Continue in this order until you have 4 or 5 layers of pasta and finish with the white sauce. (Don’t use too much ragù or Béchamel at each stage; you only need a thin layer of each.)

SPRINKLEwith extraParmesan and cook in the oven for 30 to 40 minutes until golden brown and bubbling.

TIP:Leave to cool for 10 mins so that it is easier to serve up and it holds it shape.
